At Maison Taillefer, expertise is not simply a recipe: it is a skill, patience, and a commitment to excellence passed down since 1945. Our conviction is simple: taste cannot be forced, it is revealed. This requires time, precision, and a systematic rejection of shortcuts.

Maison Taillefer brings together several complementary skills, starting with artisanal coffee roasting, then the flavoring of coffees, teas and infusions, chocolate making, confectionery and biscuit making. All stem from the same founding craft, artisanal roasting, which originated in a shop in Agen more than eighty years ago. All share the same obsession: to make taste an emotion.

Artisanal roasting, our original trade

It all begins where it all began: coffee. And it begins far from our workshops, in Ethiopia. We select a 100% Arabica coffee, Grown in the tropics at an altitude of approximately 600 meters, where the temperature difference between day and night slows the ripening of the cherry and concentrates its aromas. It is this terroir that gives the fruit its potential; all our work consists of revealing it.

Rather than diluting a single bean in a blend, we make the opposite choice: single origin. No blends, just coffee chosen for its character, which we allow to express itself fully. Every day, our master roasters taste and monitor their production to to guarantee consistent quality. This consistency, invisible yet essential, is what separates a good coffee from a great one. The aroma that captivated Agen in 1945 can still be found in each of our bags today.

Why a slow, artisanal roasting process? Because a quick roast, carried out at very high temperatures, burns the surface of the bean without cooking it through: it overpowers the flavor and overwhelms the most delicate aromas. Our artisanal roasting does the exact opposite. By heating gently and slowly, we cook the bean right to the core: the coffee gains body and depth, the bitterness remains controlled, and the aromas fully develop. It's longer, more demanding, but that's precisely what makes the difference in the cup.

Flavored coffees, a signature

Beyond natural coffee, Maison Taillefer cultivates a flavoring expertise that gives it its unique character and indulgence. Flavoring coffee isn't about masking; it's about enhancing. We carefully work on the dosage and balance so that the indulgent note—hazelnut, caramel, or vanilla—blends with the bean without ever betraying its character. The result: coffees with generous and fragrant flavors, yet always true to the taste of coffee. Two of them, Caramel and Hazelnut, have even been chosen Flavor of the Year 2015.

This expertise has been honed over generations. Flavoring is a demanding art: too much flavoring and the coffee becomes artificial, too little and the promise is broken. Everything hinges on the dosage and the quality of the starting bean. That's why we always begin with a carefully roasted base before considering the flavoring.
